Bread with Feta, Watermelon and Walnuts is one of my favourite things to eat in warm weather! It makes the perfect Summer snack, or breakfast. In Farsi we refer to it as Noon Paneer Hendooneh. I realise that this is not a recipe but I wanted to post about it anyway. There might be friends out there who have never heard of this heavenly combination and I don’t want them to miss this in their lives.
Quality ingredients are key
You can have you feta, watermelon and walnuts with any kind of bread you like. Our favourite bread is noon sangak, a Persian type of flatbread. Unfortunately this is not easy to come by in most places which is why in this time we had it with a different type of flatbread (to avoid any bread envy). Sometimes we even ate it with whole wheat toast, which was delicious too! Other than that make sure you have a nice, sweet watermelon and real feta cheese (made from sheep milk). Add quality walnuts and you’re in for a delicious Summer snack (or breakfast, or any meal of the day). We usually eat that much that it replaces a full meal.
How to eat it for the most enjoyable experience
The easiest way to eat this delicious combo is to take a piece of bread and make a loghme, as we say in Farsi. This means you put a piece of feta cheese and a piece of walnut on it and roll it together so nothing falls out. Put the loghme in your mouth, followed by a bit bite of juicy watermelon and enjoy these delicious flavours exploding in your mouth.
