Chicken Enchiladas

Enchiladas are one of my favourite Mexican dishes. This is my version of tasty chicken enchiladas with chicken breast instead of ground beef. You wouldn’t believe how often we eat them. I hope you’ll enjoy them as much as we do!

Tasty Chicken Enchiladas - My favourite Mexican Dish!

Ingredients (serving 4):

  • 150g rice
  • 8 tortillas (I used whole wheat but feel free to use any type you like)
  • 300g cheddar cheese

Sauce

  • 1 can chopped tomatoes (400g)
  • 1 tsp Cajun spice mix (chilli powder, cumin, oregano, cayenne pepper, coriander)
  • 1 tsp ground garlic
  • black pepper to taste
  • salt to taste

Chicken mix

  • 2 tbsp vegetable oil
  • 2 chicken breasts
  • 1 red bell pepper
  • 1 small can sweetcorn (140g)
  • 1 bunch coriander (cilantro)
  • 1 tbsp Cajun spice mix
  • 1 tbsp smoked paprika (or regular paprika)
  • 1 tsp ground garlic
  • 1 tsp crushed chilis
  • black pepper to taste
  • salt to taste

Guacamole

  • 2 avocados
  • 2 small tomatoes
  • 1 tsp olive oil
  • 1/2 tsp garlic (ground or fresh)
  • black pepper to taste
  • salt to taste

Instructions:

Start with the rice

  1. Transfer the rice in a small pan and wash it.
  2. Add water to it (about twice as much as rice) and salt. Put it on medium heat.
  3. Once the water starts boiling reduce the heat to low and put on the lid.

Prepare the sauce

  1. Transfer the chopped can tomatoes to a small pan.
  2. Add all the spices and put it on medium heat.
  3. Once it starts bubbling reduce the heat and let it simmer so the sauce can reduce a bit.

Fry the chicken mix

  1. Chop the bell pepper in small pieces and fry them in a tbsp of vegetable oil. After about 5 minutes take them out and put them on a plate.
  2. Cut the chicken breast in small cubes. Fry them in another tbsp of vegetable oil. When they’re almost done add all the spices.
  3. Add the peppers back in and also add the drained sweetcorn.
  4. Chop the coriander and add half of it to the chicken and the other half to the sauce.

Make the guacamole

  1. Cut the avocados and finely chop the tomatoes. Mash them both together with a fork.
  2. Add ground garlic (or fresh finely chopped garlic), olive oil, black pepper and salt to taste and combine well.

Fill the enchiladas

  1. Preheat the oven to 180 degrees Celsius (360 Fahrenheit).
  2. Take a tortilla and spread 1 tbsp of the sauce on it.
  3. Add about 3 tbsp of the rice and place it in a row from top to bottom on the tortilla.
  4. Next put on about 5 tbsp of the chicken mix and 2 tbsp guacamole.
  5. Add as much cheese as you like on top and roll both sides of the tortilla up.
  6. Repeat these steps with the rest of the tortillas. Put the enchiladas in an oiled baking tray and put the rest of the sauce on top.
  7. Sprinkle with the rest of the cheese and bake for about 10 minutes.

  • 1 tsp dried crushed chillis
  • black pepper to taste
  • salt to taste

Guacamole

  • black pepper to taste
