Enchiladas are one of my favourite Mexican dishes. This is my version of tasty chicken enchiladas with chicken breast instead of ground beef. You wouldn’t believe how often we eat them. I hope you’ll enjoy them as much as we do!

8 tortillas (I used whole wheat but feel free to use any type you like)
