Salad Shirazi – Shirazi Cucumber, Tomato and Onion Salad

Salad Shirazi, as the same suggests, comes from Shiraz and it’s the most popular salad in Iran. It consists of finely chopped cucumbers, tomatoes and red onions, dressed with verjuice (or lemon juice as as alternative) and seasoned with dried mint and salt.

The fine texture makes Salad Shirazi satisfying to eat and allows all the flavours to mingle in your mouth for an explosion of taste and freshness.

The main ingredient for the dressing for Salad Shirazi is abghooreh. Abghooreh means sour grape juice, known as verjuice in English. It’s made of the juice of unripe and unfermented grapes and has a bright, sour flavour.

You can find abghooreh/verjuice in Turkish or Middle Eastern shops. If you can’t get your hands on it, you can substitute it with lemon juice. The sourness of verjuice is much more subtle than that of lemon juice, which is why you might want to use less lemon juice, than the amount of verjuice the recipe calls for.

Ingredients (serving 4)

4 to 5 medium sized tomatoes (200g/7oz)

1 medium cucumber (200g/7oz)

1 small red onion (120g/4oz)

6 tbsp abghooreh/verjuice or 3 tbsp lemon juice

2 tsp dried mint

Pinch of salt

Time

20 minutes

Method

Finely chop the cucumber, tomatoes and onions. All three ingredients should be chopped in tiny (about 0.5cm/0.2″) cubes.

Chop the cucumber in half. This will make the next steps easier. Cut one half cucumber in thin (about 0.5cm/0.2″) lengthwise slices. Divide the slices in two cucumber halves and place them both cut side on the chopping board. Slice them again, so that you have long, thin ‘sticks’. Hold them together with one hand, while you chop the cucumber widthwise, as you normally would. Now you have very fine cubes. Repeat this with the other half.

Cut the tomatoes in thin slices, aiming for the same size as the cucumber. Remove the seeds and juices. Then chop them into fine cubes.

Season with abghooreh/verjuice or lemon juice, dried mint and salt. Enjoy on its own as a healthy salad or as a refreshing side dish!
