Mast o Khiar – Yoghurt with Cucumber, Raisins and Walnuts

Mast o Khiar is a delicious, creamy yoghurt, that you can enjoy on its own, with crackers or as a side dish with a full meal. There are so many versions of Mast o Khiar. It simply translates to ‘yoghurt and cucumber’ and so the basic version is made of yoghurt, cucumbers and garlic, seasoned with salt.

This time I made a more extensive version of Masto Khiar, that also includes crushed walnuts and raisins. My German wife doesn’t like the combination of something sweet like raisins and garlic, so I don’t include it in this version. For many Iranians garlic is a must though, so if it’s the first time you’re trying it, I recommend you combine a small part of the yoghurt with garlic to see if you like it.

Traditionally Maast o Khiaar is served as a ‘maze’, which is a snack accompanied by aperitifs. However it can also be found as part of a big spread of different Iranian dishes, serving as a side. But to be honest, it’s so good even as a snack on its own.

Ingredients

500g/1.1lbs Greek or Greek style yoghurt

100g/3.5oz cucumber (about half a cucumber)

5 tbsp crushed walnuts

3 tbsp raisins

Salt to taste

2 cloves garlic (optional)

Crushed dried rose petals as garnish (optional)

Time

10 minutes

Method

Cut one cucumber half in thin (about 0.5cm/0.2″) lengthwise slices. Divide the slices in two cucumber halves and place them both cut side on the chopping board. Slice them again, so that you have long, thin ‘sticks’. Hold them together with one hand, while you chop the cucumber widthwise, as you normally would. Now you have very fine cubes. Repeat this with the other half.

Crush or chop the walnuts until the pieces are fairly small.

If you want to use garlic, finely chop the cloves or press them through a garlic press.

Combine all the ingredients with the creamy yoghurt and season with salt to your liking.

If you like, you can garnish the Mast o Khiaar with crushed or whole little rose petals. Serve as an appetiser with crackers, bread or crisps or as a side with rice and Persian stews.
