Cheesy Cajun Steak Tacos

Can I just say how much I love tacos? But really, who doesn’t? I’m a huge fan of Mexican food in general but tacos gotta be my favourite, because they’re so versatile! You can adjust the filling depending on what you feel like eating that day, so basically you could be eating tacos every day without getting bored!

I love experimenting with them and trying new flavour combinations by adding and removing things from my taco-must-have-ingredient-list. I especially like adding some Louisiana Cajun flavour! Wether I give ground beef, chicken, or steak bites the Cajun spice treatment, it just makes for that smokey southern flavour that I love.

Today I’m going to share with you my so far favourite taco recipe: Cheesy Steak Tacos! So without further ado, let’s get to it!

Cheesy Cajun Steak Tacos

Ingredients

  • 4 soft wheat tacos

Fillings

  • 1 red pepper
  • 1 green or yellow pepper
  • 1 medium onion
  • 1/2 tsp ground garlic
  • 1 small tin sweetcorn
  • Jalapeños
  • 125g/4.5oz grated cheddar
  • 1 small bunch coriander/cilantro
  • 1 beef ribeye steak (approx. 250g/9oz)

For the guacamole

  • 1 ripe avocado
  • 1 small tomato
  • 1 tsp lime juice
  • 1 clove garlic

Condiments and spices

  • 2 tbsp olive oil
  • 2 tbsp chilli sauce
  • 2 tbsp mayonnaise
  • 2 tsp Cajun spice
  • 1/2 tsp smoked paprika
  • Black pepper
  • Salt

Instructions

  1. Preheat your oven to 200 degrees C/400 F/Gas mark 6.

Prep your ingredients

  1. Wash the coriander and spread it out to dry on a clean kitchen towel.
  2. Combine the mayonnaise and chilli sauce into chilli mayo. Spread it onto your soft tacos.
  3. Skin off the onion and finely slice it. Wash the peppers and quarter them, then finely slice them horizontally to match the size of the onion slices.
  4. Fry the onions in 1 tbsp hot olive oil over medium temperature for about 2 minutes. Add the peppers and keep frying everything together for about 5 more minutes.
  5. Season with 1 tsp Cajun spice, 1/2 tsp ground garlic (or 1 clove pressed fresh garlic if you prefer), black pepper, and salt. 

Fill your tacos

  1. Distribute your veg evenly between the four tacos.
  2. Add some sweetcorn and jalapeños to the filling.

  3. I use the reverse side of a muffin tray to shape and bake the soft tacos. If you’re using corn taco shells and don’t wanna make enough to fill your oven dish, the muffin tray will help them keep their position.

Bake

  1. Top up your tacos with as much cheese as you like and pop them in the oven for about 10 minutes.

Make your guaca

  1. In the meantime make a quick guacamole by squishing the ripe avocado with a fork. Finely shop the tomato and add it to the avocado. Also add 1 pressed garlic clove, a squeeze of lime juice, black pepper and salt. Combine everything well and done is your guaca.
  2. Roughly chop the coriander, which should be more or less dry now.

Fry your steak bites

  1. Now cut the steak into small strips. Preheat your frying pan with 1 tbsp olive oil.
  2. Once the oil is hot, add the steak strips and briefly fry them. Try to nicely brown them from each side but don’t overcook them if you want them to be juicy and tender. I fried mine over hot temperature for 2 to 3 minutes.
  3. Season the meat with 1 tsp Cajun spice, 1/2 tsp smoked paprika, black pepper and salt. Make sure all strips are nicely covered in spices.

Top up your oven baked tacos and serve

  1. Remove your tacos from the oven and top them up with juicy Cajun steak bites, fresh guacamole, and chopped coriander.

  2. Serve with limes and chilli sauce. Enjoy!

Jalapeños

1 ripe avocado

1 small tomato

1 tsp lime juice

1 garlic clove

125g/4.5oz grated cheddar

2 tbsp olive oil

2 tbsp chilli sauce ( I used my homemade one, you can find the recipe here)

2 tbsp mayonnaise

1 small bunch coriander/cilantro

2 tsp Cajun spice (I love the one from Waitrose)

1/2 tsp smoked paprika

1/2 tsp ground garlic

Black pepper

Salt

Time

Prep: 20 min

Bake: 10 min

Fry: 10 min

Total: 40 min
