Ab Doogh Khiar – Refreshing Cold Yogurt Soup

The current heatwave here in England screams for a refreshing Summer recipe like Ab Doogh Khiar! In this weather we don’t really feel like eating proper dinner or lunch but being the foodies that we are, we still want to eat something delicious. If it’s cooling us down at the same time, all the better! Yesterday I made the first Ab Doogh Khiar of the year and Stella already requested more for today.

The basis of this cold yogurt soup is a Persian yogurt drink called doogh, similar to Turkish Ayran. You can easily make it yourself! It’s important that you use strained yogurt, a sour tasting one would be ideal. I use Turkish strained yogurt from the brand Rezet. You should be able to find it in Turkish or Iranian supermarkets.

Ingredients (for 4 servings):

  • 500g strained yogurt (It should have a thick consistency and taste slightly sour. I recommend Turkish yogurt.)
  • 700 to 750 ml water (depending on thickness of yogurt)
  • 6 to 8 small cucumbers (depending on size)
  • 1/2 bunch dill
  • 1/2 bunch basil
  • 1/2 bunch mint
  • 1/2 bunch terragon
  • 10 walnut halves
  • 4 tbsp raisins
  • 8 ice cubes
  • Crunchy bread 
  • Dried rose petals and mint for decoration (optional)

 

Ab Doogh Khiar Recipe | Refreshing Cold Yogurt Soup | Aab Dough Khiaar is the ideal dish for hot days. It’s wonderfully refreshing and perfect for when it’s too hot to eat a proper dinner.

 

Instructions:

1. Transfer the yogurt into a bowl and add a bit of the water. Stir until the mixture is well combined, then add more water. The end result should be quite runny, almost like milk. It should have a solid white colour.

2. Season generously with salt. Add the raisins to the doogh so they can soak for bout 15 minutes until serving time.

3. Wash the herbs and spread them on a clean kitchen towel to dry.

4. Wash the cucumbers and chop them into fine cubes. If you like you can peel them first but I usually keep the skin on because of its nutrients. Add the chopped cucumbers to the soup.

5. Crush or chop the walnuts and add them as well.

6. If your bread is too soft you can toast it to make it more crunchy. Cut it into 2 x 2 cm cubes and set aside.

7. When the herbs are dry finely chop them and add them to the soup.

8. Finally add the ice and bread cubes and decorate with dried rose petals and/or mint if you like.
